When I think of pancakes it reminds me of a tough, chewy sugar-coated yuck!  But, at the requests of Baussy and Ben, I’ve opened my mind a little to pancakes and have vowed to make them yummy.  I haven’t gotten crazy enough this weekend to do my own mix portion but I have been using Krusteaz Buttermilk Pancake mix.  Why reinvent the wheel in some cases, right?!?

I am a big fan of bacon for breakfast, but really, really hate my house to get greasy and smelly from making it in a frying pan.  I learned a quick trick in my restaurant days to bake the bacon in the oven on a rimmed cookie sheet lined with parchment paper.  Easy to cook and easy to clean up.  After you remove the bacon allow the grease to cool and then it’s easy to roll up and toss away.

Today I followed the instructions on the package and added chopped bacon, along with the juice and zest of a lemon.  Scrumptuous!

Another time-saving tip is to always make more than you need – it’s quite is to freeze them into gallon plastic bags and put deli paper in between.  You can pull them out and pop them in the toaster for a fast breakfast.   I think that pancakes must might be my new craze.  Of course, Ben wants to join in the action and topped off his own pancakes and used my camera to photograph!
